Hello Chocolate is happy to present this unique unroasted chocolate by McGuire (Canada). In the current selection of cacao origins being utilized, a distinct fusion emerges, crafting individualized flavors within each chocolate bar. Before the roasting process commences, a meticulous hand-sorting ritual takes place, targeting beans with partially torn husks or irregularly small ones that could disrupt uniform roasting. These outliers from various origins unite to form an exclusive blend, never to be replicated.
Choosing not to subject the beans to roasting forfeits a phase of flavor development, yet it conserves the inherent essence of the cacao. Although often termed “raw chocolate,” it strays from raw food categorization due to the fermentation and grind temperatures. “Virgin” or “unroasted” more aptly describe this style.
Adorning the bar’s front is an exquisite depiction of a cacao flower, the very origin of cacao pods. The artwork originates from the skilled hands of Kristofer Parley, a Victoria-based artist renowned for his mastery of watercolors and ink. Encountered during their inaugural year in St. Andrews, the meeting coincided with Kristofer’s stay for the KIRA Artist Residency.
