This exquisite chocolate bar is a true testament to the dedication and craftsmanship of the Q’eqchi Maya farmers of San Juan Chivite, Guatemala. At Goodnow Farm, we work closely with these farmers, who harvest cacao fruit from wild trees surrounding their village, then ferment and dry their beans at two facilities they’ve built within the community. This careful control over the fermentation and drying process ensures the beans’ exceptional quality.
During an early visit to San Juan Chivite, the farmers shared that their old facilities were limiting their ability to produce high-quality cacao, prompting us to step in and help fund the construction of an updated fermentation and drying facility. This upgrade allowed the association to expand from ten to over thirty farmers, yet we continue to source beans exclusively from the original ten. This custom harvest ensures we receive beans with the distinctive flavors we seek, representing the best of their land and community.
What sets this chocolate apart is our use of freshly pressed Asochivite cocoa butter, giving the bar its exceptional smoothness and deep, single-origin flavor. As one of the few chocolate makers in the country who presses our own cocoa butter, we’re able to preserve the purity of flavor, allowing each bite to reflect the unique profile of the cacao from San Juan Chivite.
