The Rugoso Bad Fermentation is part of the same series as our Rugoso 70%. Frris-Holm calls this “Bad Fermentation” because not all the cacao beans turn brown during the fermentation process as they should. This “bad fermentation” gives the chocolate a very interesting flavour profile. It also ages very well. This unique chocolate is full of flavor, with good tannins and notes of baked plums.
